GreaseGrid

The Proof Packet

After every grease trap pumping, you receive a compliance-ready document bundle. One PDF. Everything an inspector needs.

Why it matters

Los Angeles restaurants are required to maintain grease control and keep service records under LAMC Section 171 and the LA Sanitation FOG (Fats, Oils, and Grease) program. When an inspector shows up, you need to produce documentation proving your traps have been serviced on schedule and the waste was disposed of properly.

Most restaurants scramble. They dig through email threads, call vendors for manifests, and hope they can find photos before the inspection deadline. The proof packet eliminates that scramble. Every pump-out comes with a complete, inspection-ready document package, delivered to your GreaseGrid portal.

What is in the packet

Waste manifest

The official manifest showing waste volume, type, transporter, and disposal facility. Required by LA Sanitation for FOG compliance.

Before and after photos

Timestamped photos of the grease trap before and after pumping. Visual proof that the service was performed.

Vendor credentials

Copies of the vendor's business license, waste hauler permit, and liability insurance. Always current, always verified.

Service date and time

Exact date, start time, and completion time of the pump-out. Matches your maintenance schedule.

Volume pumped

Gallons removed, breakdown of grease vs. water, and observations about trap condition.

Compliance summary

A one-page summary formatted for quick review during LA Sanitation or LADBS inspections.

How you get it

Within 24 hours of the vendor completing your pump-out, your proof packet is generated and delivered to the compliance vault in your GreaseGrid portal. You can download it, email it, or present it directly from your phone during an inspection.

Proof packets are retained permanently in your vault. You can access the complete service history of any location at any time.
